In a context of international thinking on food systems, promotion of indigenous knowledge and recognition as a discipline of food fact study, this study emphasizes the diversity of traditional food in Cameroon and in particular the place of safou (Dacryodes edulis). Through numerous verbatim extracts from directed discussions, safou appears as a food with appreciated nutritional and sensory virtues, a social fruit, an emblematic fruit of a traditional diet rich in advantages to face nutritional transition.
