@article{fdi:010074049, title = {{D}evelopment and acceptability of locally made fish-based, ready-to-use products for the prevention and treatment of malnutrition in {C}ambodia}, author = {{S}igh, {S}. and {R}oos, {N}. and {S}ok, {D}. and {B}org, {B}. and {C}hamnan, {C}. and {L}aillou, {A}. and {D}ijkhuizen, {M}. {A}. and {W}ieringa, {F}ranck}, editor = {}, language = {{ENG}}, abstract = {{B}ackground: {C}ambodia has a high prevalence of moderate acute malnutrition and severe acute malnutrition ({SAM}). {T}he {SAM} treatment requires ready-to-use therapeutic foods ({RUTF}s), whereas ready-to-use supplementary foods ({RUSF}s) are used for prevention of acute malnutrition. {T}hree locally produced fish-based products were developed: an {RUTF} paste ({N}um{T}rey-{P}aste) for treatment and 2 wafer versions, one for prevention ({N}um{T}rey-{RUSF}) and one for treatment ({N}um{T}rey-{RUTF}). {O}bjective: {T}o assess the acceptability of {N}um{T}rey-{P}aste and {N}um{T}rey-{RUSF} in comparison to a standard biscuit product ({BP}-100) used for the treatment of {SAM}. {M}ethods: {A}cceptability of {N}um{T}rey-{RUSF} and {N}um{T}rey-{P}aste was tested in a nonblinded crossover taste trial among children (n = 52), aged >= 6 months to 18 years, and their caregivers. {E}ight organoleptic qualities were assessed on a 5-point hedonic scale, as well as a ranking test. {A} score of 1 to 3 was categorized as acceptable. {T}he acceptability of {N}um{T}rey-{RUTF} was assessed using the caregivers' perception during an {SAM} treatment intervention. {R}esults: {T}aste trial: {T}he proportion of children categorizing products as overall acceptable was lowest for {N}um{T}rey-{P}aste compared to for {BP}-100 and {N}um{T}rey-{RUSF} (21% vs 43% [{BP}-100] and 36% [{N}um{T}rey-{RUSF}]). {N}o difference was found in the proportion of children who ranked {BP}-100 or {N}um{T}rey-{RUSF} as "liked most" ({P} > .05). {A}cceptability of {N}um{T}rey-{RUSF} ranked highest in appearance and taste (caregiver), whereas acceptability of {N}um{T}rey-{P}aste was ranked lowest in appearance and smell among the products. {I}ntervention trial: {T}he acceptability of {N}um{T}rey-{RUTF} increased from 72% to 86%. {C}onclusions: {T}he overall acceptability was ranked lowest for a pure paste product. {H}owever, filling the paste into a wafer made the product more acceptable.}, keywords = {locally produced foods ; fish ; ready-to-use foods ; acute malnutrition ; acceptability ; {C}ambodia ; {CAMBODGE}}, booktitle = {}, journal = {{F}ood and {N}utrition {B}ulletin}, volume = {39}, numero = {3}, pages = {420--434}, ISSN = {0379-5721}, year = {2018}, DOI = {10.1177/0379572118788266}, URL = {https://www.documentation.ird.fr/hor/fdi:010074049}, }
