Holothurians are exploited for "sea cucumbers" production by traditional fisheries located in the Tropical Indo-Pacific-region. The structure and characteristics of these fisheries have been assessed in New Caledonia, other South Pacific countries and at the world scale. Their temporal variability, estimated from the fishery and trade statistics, is very high. The relative importance of the different producing countries varies according to changes in the political, economical and sociological conditions as well as the state of the biological resource.
