  abstract = {{T}he scheme proposed is based on the analysis of "forms", as is used in labour and industrial economics studies. {T}his allow the diversity of various types ofishing and aquaculture to be understood by means of a classification. {I}t also enables temporal changes to be interpreted by introducing the concept of the production network. {T}he classification is based on the signs and indicators used by operators to identify, capture or rear, and select the species; it describes the form of fishery or aquaculture. {T}he production networks and theirspecific relationships with the natural environment, the work and the market are deduced from these forms. {T}he way in which the network function and their limits provide information on temporal changes.
