@article{fdi:010062400, title = {{L}actic acid bacteria against post-harvest moulds and ochratoxin {A} isolated from stored wheat}, author = {{B}elkacem-{H}anfi, {N}. and {F}houla, {I}. and {S}emmar, {N}. and {G}uesmi, {A}. and {P}erraud {G}aime, {I}sabelle and {O}uzari, {H}. {I}. and {B}oudabous, {A}. and {R}oussos, {S}evastianos}, editor = {}, language = {{ENG}}, abstract = {{A} total of 54 lactic acid bacteria ({LAB}) were isolated from stored wheat samples sourced from grain silos in {N}orth {T}unisia. {F}ifteen representative isolates were identified by 16{S} r{DNA} sequencing as {P}ediococcus pentosaceus, {L}actobacillus plantarum, {L}actobacillus graminis, {L}actobacillus coryniformis and {W}eissella cibaria. {T}hese isolates were screened for antifungal activity in dual culture agar plate assay against eight post-harvest moulds ({P}enicillium expansum, {P}enicillium chrysogenum, {P}enicillium glabrum, {A}spergillus flavus, {A}spergillus niger, {A}spergillus carbonarius, {F}usarium graminearum and {A}lternaria alternata). {A}ll {LAB} showed inhibitory activity against moulds, especially strains of {L}. plantarum which exhibited a large antifungal spectrum. {M}oreover, {LAB} species such as {L} plantarum {L}ab{N}10, {L}. graminis {L}ab{N}11 and {P}. pentosaceus {L}ab{N}12 showed high inhibitory effects against the ochratoxigenic strain {A}. carbonarius {ANC}89. {T}hese {LAB} were also investigated for their ability to reduce {A}. carbonarius {ANC}89 biomass and its ochratoxin {A} ({OTA}) production on liquid medium at 28 and 37 degrees {C} and varied p{H} conditions. {T}he results indicated that factors such as temperature, p{H} and bacterial biomass on mixed cultures, has a significant effect on fungal inhibition and {OTA} production. {H}igh percentage of {OTA} reduction was obtained by {L}. plantarum and {L}. graminis (>97%) followed by {P}. pentosaceus (>81.5%). {T}hese findings suggest that in addition to {L}. plantarum, {L} graminis and {P}. pentosaceus strains may be exploited as a potential {OTA} detoxifying agent to protect humans and animals health against this toxic metabolite.}, keywords = {{LAB} ; {S}tored wheat ; 16{S} r{DNA} sequencing ; {A}ntifungal activity ; {P}ost-harvest moulds ; {A}spergillus carbonarius ; {O}chratoxin {A} ; {TUNISIE}}, booktitle = {}, journal = {{B}iological {C}ontrol}, volume = {76}, numero = {}, pages = {52--59}, ISSN = {1049-9644}, year = {2014}, DOI = {10.1016/j.biocontrol.2014.05.001}, URL = {https://www.documentation.ird.fr/hor/fdi:010062400}, }
