While women present in the sector originate from a narrower and more specific social environment than their male counterparts, their educational level is also lower. Correspondingly, the size and the scale of their enterprises are smaller and their profits more limited. Yet, contrasts between men and women in this regard vary both across seasons and in function of the specific profile of the trading or the processing (drying, smoking, salting) activities considered. Conversely to what one might believe, women do not always suffer from the shortcomings attached to the low season.
