Pectinases produced by AW96 exhibited increased thermal stability compared to AW99. Results support the idea that not only the quantity but also the quality of the enzymes can be modified when SSF or SmF techniques are used. The use of differential display polymerase chain reaction may enable the isolation of solid state fermentation-specific genes.
