We speak about micro-organisms involved in SSF processes, considering the better performances of filamentous fungi. The solid substrates and their basic macromolecular compounds are detailed in relation to this complex and heterogeneous systems. Biomass measurements are examined in detail, as so as environmental factors, both essential for studying and optimising SSF processes.
