The classical doctrine of Ayurveda, the "science of longevity", is expounded in ancient sanskrit works which may have been composed during the first centuries of our era. According to this medical system health depends on the balance and good functioning of three vital principles, and diseases are linked to imbalance in these principles, or disturbances in the secondary forms of a single principle. Consequently, the name tri-dosa or "three troubles" was given to this triad of elements. Since the derangement of the dosa is attributed chiefly to unsuitable diet, regimens and dietetics are considered as very important for the prevention of diseases. The preventive and curative virtues of food as well as drugs are explained according to the ayurvedic theories of rasa, guna, virya, vipaka and prabhava. These aspects of food and drugs are always examined by the ayurvedic physician while prescribing a regimen or a remedy. Sanskrit texts on medicine discuss every variety of edible products and indicate their different properties, which are suitable for individuals of a given "temperament", comportment and state of health, taking into account the climatic conditions, time of the day, etc. (Résumé d'auteur)
